Tõrvaaugu Organic Farm grows organic gluten-free buckwheat and all raw material processing/production takes place in the production building on the farm. Processing begins in the mill room, where the buckwheat is sorted and cleaned. The hull is removed from the cleaned buckwheat with a stone mill, because the stone mill gently removes the hull, which results in the buckwheat grain remaining intact. This peeling method keeps the buckwheat grain viable and allows it to be germinated. The color of the buckwheat grain is light, which confirms that the buckwheat has not been heated or processed. This type of buckwheat is called raw buckwheat.
