Buckwheat pancakes recipe:
2-3 eggs (depending on size)
3 teaspoons of sugar
~0.5 l liquid (water/milk/kefir)
1 teaspoon salt (without heaping)
2-3 dl buckwheat flour
1 tablespoon cooking oil
Mix salt and sugar with eggs. Beat the egg. Then add all the remaining ingredients while mixing. When the dough is the thickness of the "sour cream", start frying, but avoid lumps of flour.
Tõrvaaugu Mahe Farm also produces mild gluten-free buckwheat flour, which also uses a stone mill. With a stone mill, you can make raw buckwheat wholemeal flour, which preserves all the beneficial properties of raw buckwheat and which offers an excellent alternative to wheat flour, thus allowing you to bake both savory and sweet bakery products and much more.
